Vinification
Hand-picked harvest in the morning before the heat rises. Traditional vinification over lees. Strict temperature controls throughout fermentation. 15% of the blend is vinificated in new oak barrels. Matured over lees with stirring during three months after vatting.
Tasting
Crystal clear golden colour. A fruity, fresh and delicate nose dominated by citrus, lifted by notes of white flowers and apricot.
The taste is astonishing because of its balance and harmony with the nose.
The finish is long and mineral with great finesse.
The two very terroirs where white Grenache grow give this wine great balance, a blend of richness and freshness, fruit and minerality.

Dublin bay prawns fried with anis, roast monkfish with candied lemons, green asparagus with almond butter, grilled kingprawns, caramelised veal sweetbreads, veal casserole, chicken supreme, grilled red mullet, chicken in tarragon jelly, salmon fillet, pike with beurre blanc, roast turbot, trout mousse, scallop raviole, sweet pepper terrine, comté, picodons and other little goats' cheeses...and whatever else your imagination and cuisine guide you to!
